I love bruschetta and make it often when I have fresh garden tomatoes. I have always added basil and was afraid I would miss it. Boy was I wrong. This was still great, even without the basil. Such a simple but tasty appetizer that just screams summer!

Due to some hot weather lately I've been craving salads and this one caught my eye. We are getting some great fresh corn on the cob in our local markets and this was wonderful in the salad. The corn goes so well with the cherry tomatoes and new red potatoes....
