Vegetable Lasagna : page 21

Like so many of the Cook's Illustrated recipes, this one is a bit involved, but the second time through was easy (of course). Wow. This yields an absolutely delicious product that can be reheated and provide almost a week of meals! The eggplant is peeled and diced and microwaved to get some of the cooking out of the way. The combination of that, green and yellow squash, Kalamata olives, cheese and simple tomato sauce yields a nearly perfect product every time. I prepared this two days ahead of time for a post-christmas meal with four of our children and it baked up that day just wonderfully. This one is a bit of effort, but well worth it!
