About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Sloppy Potatoes

I made these for my daughter and I. We loved them..
Turkey sloppy Joes over baked sweet potatoes with toppings of chopped pickle, green onions and cheddar cheese. Fall has definitely arrived and this was the perfect fall supper. You can also make these with russet potatoes and ground beef if desired.

Soba Bowls

This made a quick and easy supper. Rachael said you could change this up to fit what you had in your pantry and fridge and I did. I used fettuccine, a bag of broccoli slaw mix, onions, beef and chicken broth, and low sodium soy sauce. I used green onions and parsley for garnish. It turned out delicious.

When I saw Rachael make this one her show Monday I realized I had all the ingredients on hand except flat leaf parsley, so decided to make this for our supper. I'm so happy I did as it was delicious. I loved the tip she gave for making your own thick Balsamic Vinegar. You cook the thin balsamic until it reduces down and gets thick. It adds a wonderful brightness to the cherry tomatoes, garlic and olive oil sauce for the spaghetti.

I saw Rachael make this on her show Friday. This was delicious. We did make one substitution. We couldn't find frozen artichokes in our local market and the ones in the can were $4 + per can. We decided to use some roasted red peppers and mushrooms in place of the artichokes. I'm hoping to try it with the artichokes sometime when we can find them at a more reasonable price.

I made this one while staying with my daughter after her baby was born. A delicious version of mac and cheese. Usually we don't care for versions with eggs but this one only had two and it was very good. Son didn't care for the sugar involved but daughter and I didn't even notice it was there.
