I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Double Corn Cornbread : page 75

Although we don't usually care for sugar in our cornbread this one was great in the double decker toasted cornbread and spicy greens stack on the same page. I toasted some of the leftovers with butter on them and it was pretty good that way too.

I did make a couple changes to the recipe. Since I'm not gluten nor dairy intolerant I used whole milk instead of rice milk and regular all purpose flour instead of Silvana's all purpose flour.

This was delicious. I love the addition of sriracha sauce to the dressing that you toss the greens in. I know I'll be making this one again. YUMMY! Makes a great lunch.

Grilled Spiced Skirt Steak Tacos : page 160

I found a great deal on a skirt steak and lucked upon this recipe when trying to figure out what I wanted to make with it. We loved the flavor of this skirt steak. My son wants me to use this marinade again to make one and not make tacos from it. He says he likes ground beef tacos better but loved the flavor of this steak. I did leave out the cilantro due to hubby and son's dislike. I pan fried ours but it would be great grilled or broiled as suggested in the recipe. The marinade is made from cola, chili powder, cumin, lime juice, chopped onion, and olive oil and the cilantro which I omitted. She also includes a recipe for a fresh salsa within the recipe which was a pretty typical one and quiet good. Hubby and I added to chopped avocado rather sliced in my version to our tacos but since son hates avocados I left that off his. She suggests crisp corn taco shells but we had those and also some soft taco shells. I love the soft shells but though the crisp ones were better with the skirt steak.
