About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

We enjoyed this one. Kinda like a reuben in a way. I used smoked sausage instead of keilbasa and the option of jalapenos instead of banana peppers. Also has mayo, spicy brown mustard, kraut, and Swiss Cheese on French Bread.

BBQ Joint Stew

This is similar to Brunswick Stew. About the only difference is that I don't put BBQ sauce in my Brunswick stew. I made Christy Jorden's Number 5 BBQ Sauce to add to this stew. It was a bit sweeter than I like but I added some hot sauce and it made it better. I usually put baby limas in my Brunswick like Christy suggested but didn't have any on hand so I used another one of her suggestion and added some green beans. Nice meal for a cold snowy day.

I wouldn't say this is the best ever chai tea but it is very good. It does make a lot but then you can share with others. I made a batch for my daughter and myself. It's quick and easy once you ziz up all your ingredients in the food processor, then all you do is add a few tablespoons to hot water or milk. I used water but may try milk sometime too. Not as good as brewed chai but still good.

This is Christy's copycat version of something Domino's Pizza has. Son and I really enjoyed these. It's a great way to jazz up chicken nuggets. Bacon and cheese Yum!

This is an excellent salad. I have been taking it to work for my lunch everyday this week and I've enjoyed it so much. I know I'll be making it again. It would also make a great side for almost any meal.

Dinner In A Dish

This was a perfect dish to make while staying with daughter. Everything is one dish, corn on the cob, green beans and chicken strips, drizzled with butter and topped with dry Italian Dressing mix. All baked in oven in one dish. I did make some mashed potatoes to go with. Delicious!

Loose Meat Sandwiches

These were great with mustard and dill pickles. The recipe calls for one 24 package of Kings Hawaiian mini rolls but the ones I found only came in a package of 12. The water with the ground beef sounded a bit much so I only used half the amount but next time I think I'd skip that step.

I don't know why I hadn't thought to do this before as it's a great idea and these were delicious. I like the idea of scrambling a dozen eggs, frying a package of sausage in crumbles and then mixing together and dividing on ten tortillas and sprinkling with cheese, then wrapping in aluminum foil and keeping in the fridge for quick morning breakfasts. All I had to do then is heat for a few minutes in the microwave and top with a bit of salsa and enjoy with my morning coffee before heading to work.

Peanut Butter Cake

Made this cake for daughter's birthday. Since son in law doesn't enjoy cream cheese I used Joy the Baker's Salted Peanut Butter Frosting. Cake was moist and delicious.

Quick and easy work night supper. Delicious too. I made half recipe for hubby, son and I and it was the perfect amount for the three of us. Will make again.

I saw a post about this one Facebook yesterday and thought I had all the ingredients except for black beans which I substituted white beans for. Once I started making the dish I realized I didn't have taco seasoning so I made some homemade. Then I found out my salsa was spoiled so I used a can of fire roasted tomatoes and some jalapeño slices. No canned corn in the cabinet so I used some leftover fried corn I had in the fridge. This was still good. Maybe someday I'll make it the correct way. I served it over the rice with some Mexican blend cheese sprinkled on top, a scoop for fresh salsa and a dollop of fat free sour cream. Didn't have to heat up my kitchen since most of this is done in the slow cooker. Just had to cook some rice.

Super Food Salad

Christy Jordan created this copy cat Chick-Fil-A salad recipe and it was delicious. Loved the sunflower seeds in this one. I substituted dried cranberries for the dried cherries since daughter was eating with me and she doesn't like cherries.

While this was good my family and I have other meatloafs we like more. I used ground turkey instead of ground chicken in addition to the ground beef. I did the extra step of pan frying slices of meatloaf after baking for an hour and resting for 15 minutes.

I think hubby and I would have liked this better with jarred spaghetti sauce instead of the ketchup and Italian seasoning. It was good be lacked a bit of flavor we thought. Also mine didn't look very appetizing after spending all that time in the slow cooker. The onions and bell peppers turned a brown color the same as the meat and sauce. It was still good served over rice and I tossed a salad to complete our meal. If I make it again I'll use some spaghetti sauce and see how we like it that way. It is nice to come home to a meal finished in your slow cooker.

Watermelonade

Watermelon, lime juice, honey and a pinch of salt. A very refreshing summer drink served over ice. I love watermelon and usually don't enjoy it altered in any form but this was delicious.
