Pistachio-Chai Muffins : page 102
These were easy to mix up and moist and delicious. Not overly sweet but very satisfying. I did omit the pistachios since I didn't have any on hand. They were great without them but I'm sure they would also be good with. The chai tea gives them a great flavor. I'll make these healthy gems again.
I baked mine in a silicone muffin pan and didn't spray or oil the muffin wells. They came out perfectly.

Shrimp Cobb Salad : page 32
This is a beautiful salad on the plate and tastes as good as it looks. I made this one for hubby, daughter and I. We divided it three ways since son-in-law doesn't eat many of these ingredients (fixed him something else).
Instead of chicken and hard boiled eggs, which is traditional in Cobb salad, this one uses shrimp and corn instead. I substituted Roma tomatoes for the cherry tomatoes since cherry tomatoes were very expensive and Roma were on sale. Wonderful supper for a warm day. You only need the stove long enough to fry the bacon and sauté the shrimp. I'll be making this one again.

Tuscan Lemon Muffins : page 100
These are great light and airy muffins with a wonderful summery citrus flavor. I had never thought of using ricotta in muffins but they are great in these. You get a nice crunch from the turbinado sugar sprinkled on top. Since the recipe calls for 2 tablespoons of the sugar and there are 12 muffins I sprinkled 1/2 teaspoon on top of each muffin. If you like lemon desserts then you should try this one.
