About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Ching's Everyday Easy Chinese: More Than 100 Quick & Healthy Chinese Recipes

I had an avocado I needed to use up as well as some rye bread so thought this would make a great breakfast for me this morning. It was quick and easy but I got my egg a little more done than I like since one of the yolks burst as I was flipping them. I like mine over easy. This was still quiet good especially the runny yolk with the avocado and rye bread. I would have never thought to make this but glad I tried it.
