| I had some apples that needed using up and had all the other ingredients on hand so decided this was the recipe to try. I'm happy I did as it's very good. In the apple notes the author says she's made this one with many different firm sweet apples and since both Pink Lady and Cameo were on that list and I knew the apples I had were one of those (came from my Dad and couldn't remember which he said he bought) I used those.
I like the cheat sheet given in this book for apple varieties to use in the recipes or when you're looking for either firm-tart, firm-sweet, or tender-tart apples. |
| We liked this one but it took much longer to cook that the recipe stated and it was still a bit on the wet side in places. This may have been my fault since it said to use a 12 inch cast iron skillet and I think mine is a 10 inch one. This was still very good and I'd make it again but use a little larger pan on less mixture. I didn't have any of the suggested apples but since it said to use a sweeter apple and I had some Virginia Beauties that we had recently picked from son-in-law's Grandma's trees I used those. The lemon juice squeezed over the baked dish gave it a nice brightness. |
