About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Alabama White Sauce : page 38

We'd never tried white BBQ sauce and I'm sorry it took us so long as this was delicious on the Roast Beef Sandwiches from Paula Deen and also made a great dipping sauce for chicken.

Bacon Wrapped Pork Loin : page 32

I omitted the ground cinnamon, nutmeg, and red pepper and added equal amounts of smoked paprika. We don't care for cinnamon and nutmeg in savory dishes. I made it in the oven instead of in the smoker. I thought the smoked paprika would help to give it a smoked flavor. While this was very good it was a bit dry but the sauce helped. I chose to make the Carolina Mustard Sauce from page 38 as it suggested one of the sauces from that page to go with.

Carolina Mustard Sauce : page 38

Even though hubby, son and son-in-law didn't care for this sauce daughter and I loved it so I gave it a 5. Not only was it good on the bacon wrapped pork it was great on chicken as well.

Cider-Marinated Squash Salad : page 21

This salad was way to tart for our tastes. I only called for a teaspoon of brown sugar. If I made it again I'd add more sugar to the dressing for our tastes. I made it to take on my birthday and anniversary picnic. It was fair with the baked beans and chicken.

Dr. Pepper Barbecue Sauce : page 23

Easy to make and a nice change from most BBQ sauces. I didn't have spicy mustard so I used whole grain and added a few more dashes of hot sauce. I also didn't have garlic salt so used a clove of garlic and pinch of salt.

Fresh Blueberry-Oat Bars : page 97

I made these with some blueberries I picked from Mom's bush at Dad's house. They are delicious. They taste like cheese cake with blueberries. I also loved the crust which was made with flour, quick cooking oats, sugar, baking powder and butter. My whole family loved these except for hubby who doesn't like cooked blueberries.

I used country ribs instead of baby backs since they were on sale in my local grocery store. I got rave reviews from my family on these and son-in-law said they were melt in your mouth delicious. The sauce was a nice change up to the sauce I usually use on ribs and I liked that they cook low and slow in the oven.

Peanut Butter Swirl Cheesecake Brownies : page 25

These are so easy to make since they start with a box of brownie mix. We enjoyed the addition of peanut butter and cream cheese. I will make these again I'm sure.

Slow-Cooked Baked Beans : page 22

I made these baked beans to take on our anniversary and my birthday picnic. They were delicious. They are also great reheated. I did substitute pintos for the northern beans since I forgot to get northern beans and I used two cans of light red kidney beans instead of one and one dark red. I liked that there are several varieties of beans in this one in addition to the standard pork and beans. This is one of Christy Jordan from Southern Plate's recipes. I took her tip of adding left over BBQ pork in this as well. Instead of leftover though I bought a small tub of Lloyd's BBQ. Love the convenience of making in the slow cooker.
