About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

This was delicious. I know she says in the book not to use the good bourbon but all I had was Woodford Reserve so that's what I used. I marinated for about 8 hours in fridge. Loved the apples and onions... read more >

Golden Hominy and Beef Stew : page 118

I decided to try this stew since both hubby and son love hominy and I like it too. Success with a capital S. This was delicious and we all loved it. So easy too since you don't even brown the beef. At first I though it's probably won't have much flavor since it's not browned but I was wrong, it's loaded with flavor. I did have to use white hominy instead of the yellow called for since my local grocery store was out of yellow. I will definitely make this again.

Hearty Beef and Barley Stew : page 22

Finally found another recipe that Son, Hubby and I all loved. I only made a half recipe but next time I'll make the whole one for leftovers. I did omit the celery and bell pepper since the guys aren't fans and used a package of whole baby bella mushrooms instead.

I'll be Around Steak and Mushrooms : page 30

This was very good. The meat was melt in your mouth tender. I enjoyed that there was a whole pound of mushrooms in this one. I served it over noodles but think I'd like it even better over mashed potatoes. I took the option of beef stock instead of wine since son doesn't care that much for wine in his food. It was such a small amount I don't think he would have noticed but I had some leftover beef stock so I used that. Hubby said it was good but he liked other beef tip recipes I've made better.

New Orleans Roast Beef Po' Boys : page 60

Nice to come home to supper almost ready and the house smelling good. All I had to do was toast the rolls and melt the Provolone Cheese and bit then smear with mayo, add the shredded meat and dip some of the juices into bowls for dunking. Delicious too and even Hubby enjoyed as did son and I.

No Game Brunswick Stew : page 92

Although this is a nice Brunswick stew I didn't like it as good as one I made on the stove top. It was nice to come home to after work though and tasted very good. I did have to add more hot sauce than called for.

Parmesan-Crusted Pork Loin : page 218

Very good. Unusual sauce of Parm, honey, soy and some spices though. Still quiet good and very tender. Served with mashed potatoes, carrot stick with ranch dressing and some leftover Korean Spicy Cucumber Salad.

Sausage and Hominy Stew : page 236

We really enjoyed this stew. I didn't add the cilantro since hubby and son don't care for it, but I did add some to my bowl. Instead of the baby carrots which I forgot to buy, I used the option of adding a diced sweet onion to the slow cooker.

Some like it Hot Buffalo Chicken : page 90

Thursday I came home to supper in the slow cooker. I had son put on the slow cooker around 11. Easy recipe made from boneless skinless chicken breasts, buffalo hot sauce and chicken broth placed in the slow cooker. When I got home I shredded the chicken with two forks and stirred it into the cooking liquids. I made some slaw and we ate them as sliders on dinner rolls. So good!
