About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Lemon Curd Pancakes : page 6

Hubby's not a big fan of lemon so I let him taste mine first. Not a happy face! So instead of the curd on his I put pancake syrup. I on the other had love lemon so I thought they were great. I made the curd the night before. Little different technique than I usually use. Most of the curds I've made are in a double boiler this one wasn't . love that there is ricotta in these which is one of the reasons I picked this recipe since I had a little that needed using up.
