Whole-Wheat Sesame Noodles : page 169
For some reason when I went to the grocery store I got this recipe mixed up with another and thought I needed whole wheat fettuccine and they didn't have that so I got regular F. When I started to make this to take for my lunch this week I realized I needed spaghetti noodles and since I had some regular spaghetti I used that instead of WW.
This makes for a tasty lunch that you don't have to heat up but does make some stinky breath so don't forget the breath mints. Very good!

Whole Wheat Italian Pasta Salad : page 171
I made this one for part of mine and daughters work lunches this week. I did use a veggie pasta instead of the whole wheat called for. While it was very good it left a very garlicky after taste which seemed strange since there was only one minced garlic clove in the whole thing.

Roasted Salmon and Cherry Tomato Salad : page 17
I really enjoyed the flavors in this dish. Both the salmon and tomatoes are roasted. The argula is dressed with balsamic vinegar and olive oil and then topped with the tomatoes and salmon and finally the salmon is drizzled with lemon juice.

Roasted Lemon Olive Chicken Thighs : page 69
These were very flavorful and delicious. Quick easy work night supper. I served with cooked baby carrots and mashed potatoes.

Pork Cubano Sandwiches : page 98
Son and I enjoyed this lighter version of a Cuban Sandwich, while once again hubby wouldn't touch it. This version has both ham and roasted tenderloin along with light Swiss Cheese and pickles and spicy brown mustard. Very good.

Son and I loved this one. So delicious and flavorful. I'll make this one again. I used baby bella mushrooms and home made chicken broth.

Pan -Fried Tilapia wiht Cajun Butter : page 55
Son and I though this was excellent. Hubby didn't much care for it. Quick and easy to fix on a work night. Great with the Lemony Slaw page 158.

Nicoise Salad : page 14
This was a very good lightened up version of Nicoise Salad which I made for some of mine and daughter's work lunches this week. I forgot to get argula though so had to use Romaine which I had on hand. We love argula so it would have probably been even better with that.

Mushroom Brown Rice : page 175
This was a very good side dish to go with the Spicy Pepper Chicken from Soul Food Love. Very tasty with the baby bella mushrooms and brown rice.

Lemony Cabbage Slaw : page 158
While hubby didn't care that much for this one either, he said he likes his slaw with vinegar, son and I loved it. We enjoyed the dressing made with mayo, dijon and lemon juice and the fact there was radishes in the slaw.

Hot Roasted Green Beans with Sweet Chili : page 155
Daughter, son-in-law and I loved these. SIL wasn't sure he'd like them since they had a bit of Siracha in them but he did. They also had lemon juice, garlic, honey and a pinch of salt. They are tossed in this mixture after baking in the oven. Before the oven they are tossed in a small amount of olive oil. So good!
