About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Kale and Wild Rice Casserole : page 47

When my daughter looked at my newest issue of Taste of the South Magazine she inserted a book mark at this dish. She adores kale in any way. Since hubby requested pintos for Sunday Supper and both my son and son-in-law agreed I decided to make this casserole for my daughter and I. We both agreed it was fantastic. Hubby tasted it and said it was very good but the rice wasn't done. Of course it was but it still has a little crunch since it's wild rice. Son tasted of it too and said it wasn't bad.
