About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

Melt: The Art of Macaroni and Cheese

By Stephanie Stiavetti, Garrett McCord, Michael Ruhlman
Little, Brown and Company - 2013

Although this might be considered a side we ate it as our main dish for my daughter's birthday. She loves mac and cheese and makes great ones from her own brain but she also loves trying new ones and requests a different one each year for her birthday. I actually got this book for her last Christmas and she asked me to make this recipe for her birthday this year.

I couldn't find the cheese mentioned in the title but it gave several options for alternate cheeses (love this feature in the book). I couldn’t' fine the Dubliner with Irish Stout either but used regular Dubliner instead. It does have stout in the sauce though and gives this mac and cheese a nice touch. We really enjoyed it.

Be aware this recipe will dirty up quiet a pots and dishes but it's worth it.
