A Cold Hot Radish Salad : page 155
This is a very simple recipe, almost a non-recipe but oh so delicious. It's very refreshing as well as filling. Hubby, son and I all agreed this was fantastic. I can't find watermelon radishes and did as the author suggested to substitute any pink radish. I actually used a red and white one since those are the only ones I can find here most of the time. I also used a little less olive oil than called for.

These green beans are very tasty. They were delicious served with the Salmon Croquettes.

Red Bean and Brown Rice Creole Salad : page 140
I really didn't care for this salad. For some reason the vinegar just didn't go good on the rice for me.

Salmon Croquettes with Dill Sauce : page 133
These were very good and healthy as well. Amazingly they stayed together even though the only binder is eggs. They get nice flavor from onion and celery. I made the dill sauce with plain low fat Greek yogurt and the dijon and dill give it a great flavor.

Spicy Pepper Chicken : page 122
This was very good but oh so hot. The author says it's her healthier version of Nashville hot chicken - roasted instead of fried. Left son-in-law and my lips both on fire. Daughter and son didn't blink an eye but they can do hotter than us.

Sweet Potato Skewers : page 159
Very nice side dish. Mine were a bit on the hot side though since I used hot paprika. I opted to not use salt or pepper as suggested by the author and didn't miss it a bit.
