About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

My family and I love Colcannon and this sounded similar. While it was very good we prefer our regular Colcannon instead.

Bee Stung Fried Chicken : page 167

While this was very good my family and I prefer the southern fried chicken I usually make better. I do love the name of this recipe.

A six minute egg that is barely bubbling topped with spices and cheese toast for dipping - Delicious.

I don't care for sweet oatmeal so when I came across this recipe I knew I had to try it and when I did I fell in love with it. I made the Soused tomatoes from page 193 to go with as suggested. Hubby was also delighted there were sweet variations as well since he loves his oatmeal sweetened. He choose the maple and cream one and loved his as well.

Soused Tomatoes : page 193

I made these to go on top of the Savory Steel-Cut Oats and they were delicious that way but they would also be delicious on pasta and as a side dish. They time a bit of time in the oven 3 to 4 hours but they are so worth it.

Whole Wheat Peanut Butter Cookies : page 217

Very good version of PB cookies and we enjoyed the crunchy PB in this one. We prefer our regular no flour PB cookie over this one though.
