About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Baked Spaghetti : page 39

Delicious version of baked spaghetti. Hubby, son and I all loved this one. Cream cheese, mozzarella, ground beef, onion, and spaghetti sauce topped thin spaghetti.

Cheesy Hamburger Skillet : page 38

This is an excellent version of homemade hamburger helper. The brown gravy mix gives it a nice flavor. The cheesiness comes from Cheddar Cheese soup and shredded cheddar. Hubby, son and I all agreed on this one.

Godfather Casserole : page 49

This was an easy week night meal. Browned ground beef added to cooked egg noodles, spaghetti sauce, cream cheese, and sour cream. Toss in a baking dish for 30 minutes then top with mozzarella cheese, back in oven to melt and supper is ready. Yum!

Goulash : page 55

I loved this version of goulash and hubby and son liked it but not as much as I did. The corn was a nice touch in this version and we enjoyed the shredded cheddar added to our bowls when we ate it.

Mississippi Roast : page 64

Delicious and easy work night meal. All were placed in slow cooker, returned home to a nice meal. I used it to make toasted roast beef sandwiches with provolone cheese. Unfortunately we were so hungry we dug in and I forgot to get a pix.

Nana's Hoop Cheese Mac & Cheese : page 189

While this was very good and we love hoop cheese the cheese didn't melt good. Maybe it was because I got sharp cheddar hoop cheese which is what they had I my store. Taste was still good but would have been better a bet more melted I think. I even shredded mine instead of cubing.
