About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Loved this version of beef stroganoff. The addition of Boursin Cheese along with sour cream is genius. Also loved the large amount of mushrooms and other spices in this version.

This was so good. A perfect fall meal. We ate it with some Bourbon Roast Pork with apples and onions and Sweet Potato Biscuits but it would have been delicious all on it's own. Daughter and I loved it.

Instant Pot Chili

This will be our go to chili recipe. Has a long list of ingredients but oh so good and not hard at all in the IP. I used black beans instead of kidney since my family likes the black ones better. I'll try making this one without beans too since son prefers it that way but he enjoyed this one. We used the habanero. I had to order the better than bouillon chili base on line since not in any of my stores. It's worth it. Got a great price on Lucky Vitamin website.

Delicious! I could lick the bowl and hubby liked it too. I added some fresh thyme to my bowl when I served it up. I'll definitely make again.

Instant Pot Minestrone Soup

Loved this version of Minestrone. Easy to make and your have soup in no time. I love soup for breakfast and had this several cold mornings reheated to start my day.

Instant Pot Pastrami

This is delicious and really easy but does take some time. It takes about an hour to cook in the IP then some time for cooling before rubbing on the spices. Then time in fridge before baking in a low oven for another hour then some rest time before slicing. It's worth it though.

This was delicious. I cooked it in the instant pot then shredded it in my kitchen aid with the paddle attachment. We don't like our bbq real sweet so in addition to the Sweet Baby Rays sauce I added some ketchup and apple cider vinegar.

Instant Pot Steak Tidbits

London broil seared in a very hot pan on both sides then sliced and added to some bbq sauce in the IP. Later broiled topped with cheese on garlic toast.

Moo Shu Pork

Wow this is amazing and so easy to make. Much better than any I've had in a Chinese restaurant. Best part no hard to find ingredients.

Pesto Risotto

Made 1/2 recipe of Pressure Luck's Pesto Risotto today for lunch. My mascarpone had gone bad so I topped with Parmesan instead. Also I got distracted and didn't do a quick release (natural release 7). I was afraid it would be mushy but it was perfect and still had a tiny bit of bite just like I like it. Delicious!
