About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Country-Style Biscuits : page 79

This is pretty much the way I make biscuits anyway but don't usually measure. The measurements in this recipe are spot on. I made a half recipe for 6 biscuits and that's exactly what I got. A whole recipe makes 12. Hubby ate 3, son 2 and me 1. They are made with lard, buttermilk, all- purpose flour, baking powder and salt. I used self-rising flour and omitted the baking powder and salt. Mama Dip squeezes off her biscuits and flattens them in the pan. Instead of dong that I just flattened out my dough and cut the biscuits out. If I don't do that my biscuits are super ugly. Heck sometimes they're ugly even cutting them out but as long as they taste good who cares? These were fantastic.
