About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

American Tomato Soup with Grilled Cheese Croutons : page 73

I loved this idea of cutting the grilled cheese sandwich into small squares to use as croûtons in the soup. I love dipping my grilled cheese into my tomato soup but had never thought of this idea, which is genius. The grilled cheese for this recipe is made with thin slices of extra sharp cheddar which really paired nicely with the soup.

The soup is made with canned tomatoes and has some , chicken broth, onions, garlic and hot pepper in it. Lime juice and light sour cream is added just before pureeing. I did mine with my immersion blender.

I did have to improvise a bit since I didn't have the jalapeño called for, but did have a nice green hot pepper fresh from a neighbors garden. I didn't have cilantro, but hubby doesn't like it anyway, so I used some parsley from my window herb garden. The soup was good but the croûtons were the best and I'll be doing this again when I made tomato soup.

Cilantro slaw with sauteed garlic : page 149

I made this slaw to go with the "pulled Pork" Joes on page 149. I did omit the cilantro. It only called for 2 tablespoons but my son and husband have the gene that makes cilantro taste like soap so I rarely use it if they are eating the dish. We all enjoyed the Joes' with the slaw. I think the slaw tastes great by itself too.

Easy "Pulled Pork" Sloppy Joes : page 148

This was fantastic. I'd never thought of making sloppy joes from pork but this tasted out of this world. A cross between a pulled pork sandwich and Sloppy Joes. I made the slaw on page 149 to go with and it complimented it wonderfully. I know I'll make these again.
