I have gone low-carb in 2010, so that's different recipes to explore again. Filleting flat fish : page 14

As with the round fish, I did manage, but I could have used more detail, for instance on how to do the other half if you can't use both hands equally.

Filleting small round fish : page 13

Well, I did manage to fillet a mackerel using this. Still, I would have liked a bit more detail - where should I expect bones, what do I do with the fins, etc.

If this is "quick and simple", I am not sure I dare to try any other chapters of this book, as I found it quite elaborate. The end result was good, classic French(ish), but not spectacular.
Next time I might use just parsley instead of mixed herbs.
