Recipes: A Collection for the Modern Cook

Roasted Pear Salad with Gorgonzola : page 124

I made this to take to a cookbook club meeting when our group had selected Susan Spungen's book to try. All the elements together are so delicious. There are a few separate steps to making the whole salad composition, but each can be done in a flash by itself so, all together, it's quite do-able to make for a nice dinner, or even a weeknight meal if you're organized ahead of time. You can vary the recipe by selecting another blue-veined cheese, another type of bread, pear, nut or mix of greens. It's very adaptable, and you get a reasonable approximation of the original every time.
