Pear-shaped pies that are relatively quick to make. Each pear has an almond/brandy filling and is wrapped in puff pastry. The poaching liquid for the pears is reduced to make a sauce.

These are to die for, and instantly became a favourite at our place. You can hand whip them up in no time and they bake in just 15 minutes. All they need is a few raspberries scattered around.

We loved this, even using a relatively inexpensive frozen fish fillet. The secret is to use Madhur's own red curry paste.

This was surprisingly quick and easy, and I'll never need to grumble again how the commercial pastes seem to be mostly salt and/or sugar. I used only a small fraction of the chilli and paprika suggested by Madhur, in order to let the other beautifully fragrant Thai flavours come into their own. I substituted ginger for the galangal, but there's no real flavour substitute for kaffir lime. Leaves worked fine in the absence of kaffir lime rind.

Ingredients include Maggie's signature verjuice and also prunes and dried apricots. I left the crusts on the bread, and can't see why she said to cut them off. None was left for another day at our place.

Was going to give this 5 stars, as it was really delicious. However, it's a bit fiddlesome, and I'm wondering if there's a simpler but equally tasty way to combine pastry, quinces and prunes. Also if you have very large quinces, three is too many. I saved a few slices for a later quince and apple crumble.

Maggie says she uses this pastry 99/100 times, so it ought to be good. At my first attempt (not being a natural with pastry!) I pulsed it too long past the "resembles course breadcrumbs" stage, so that when I added the sour cream it formed more of a sludge than a ball though I still managed to shape it and it tasted fine. I'll try it again and maybe review my assessment!

Definitely a new winter favourite. I had chestnuts that needed using, so used them instead of walnuts. It's hard to imagine that it could have been better without them.

I had been wary of risotto but this recipe made it seem easy. Next time I might try a mixture of mushrooms, or add dried mushrooms as well, as Jamie suggests.

A favourite one-pot-meal for winter evenings. Has aubergines/eggplants and tomatoes as other major ingredients.

Every cookery book gives a recipe for tomato sauce, but this is the one I always use to spread over a pizza base before adding the other ingredients. The combination of tomato, olive oil, chilli, basil, garlic and oregano is perfect for the purpose, and I can avoid the sugar and salt so often added to commercial versions.

The dried mushrooms give this a delicious flavour, and the recipe is highly adaptable. Really good for the nights when nothing was planned and there's no meat in the fridge.

Relatively quick and easy, maybe a bit bland. I'll add less of the dried herbs next time as they make it a little bitter, and maybe use parsnips instead of turnips.
