Easy Cheesy Chili Chicken from Eating Stella Style: Low-Carb Recipes for Healthy Living

My husband enjoyed this a lot. It was easy enough for a weeknight, but I will have to tweak the seasonings some, as it was just a bit too salty for my tastes. read more >

Food Matters: A Guide to Conscious Eating with More Than 75 Recipes

All-Purpose Tomato Sauce : page 147

A very basic tomato sauce. I have used this formula many times for pasta sauce and for dishes like chicken parmesan. It is easy to adapt or augment.

Almost No-Work Whole Grain Bread : page 156

I have made this bread a couple of times, trying the full proofing and the faster-rising versions. Both times resulted in a really good homemade loaf that I like to eat with jam or to accompany soup. This is a dense loaf, as the other reviewer noted, but also very tasty and so, so easy. I require easy bread recipes to motivate me to make my own bread rather than getting it from the bakery.

Anything Goes Granola : page 168

My notes: It is easier to incorporate the honey after spreading the granola mixture on the baking sheet. Also, I would bake a shorter time for the next batch, perhaps 20 minutes, because I thought it got too browned and a little bitter-tasting.

Bean and Vegetable Chili : page 260

An easy, adaptable chili. Really, you can make this with whatever beans and vegetables you have on hand.

Braised Vegetables with Prosciutto, Bacon or Ham : page 243

This is a terrific way to cook almost any kind of vegetables. It's very meaty and rich, a great side or even a main if you add some chicken.

Fruit Crisp, with Apple or Nearly Anything Else : page 292

This is a very nice, easy, reliable fruit crisp that can be varied a lot of ways. Good recipe to have in your repertoire.

Orchiette with Broccoli Rabe, My Style : page 251

This is one of my go-to weeknight dinners, because I usually have all the ingredients on hand. I generally substitute broccoli for the broccoli rabe. If you add sausage, it's a complete meal.

Roasted Vegetables with or without Fish or Meat : page 241

This is a basic formula for a basic meal: roasted vegetables with a meat, like chicken. There is not a lot to this recipe, though, and it's just not very exciting.

Stir-Fried Vegetables with Shellfish or Meat : page 238

A decent technique for putting together a stir-fry, but rather plain jane. It needs a sauce for more oomph, but I think any sauce could be substituted for the liquid at the end.

Whole Grains Without Measuring : page 136

I really didn't care for this method, especially for making rice. The end result is very soupy, almost like porridge. My toddler liked it though.
