Blueberry Syrup for Pancakes : page 93
A sauce for pancakes made with blueberries and maple syrup. Any leftover syrup can be stored for a few days in the fridge and used as a 'jam' on bread or toast.

I followed the recipe exactly and the bars worked perfectly and tasted great! Lining the pan with baking paper prevented the mixture sticking to the pan.

Buttermilk Roast Chicken : page 274
Consists of 1.25kg of chicken drumsticks, marinated overnight in buttermilk (with maple syrup, cumin, salt and pepper), then baked in a hot oven. The chicken was juicy and very tender but not particularly flavoursome. I found it necessary to add quite a bit of extra seasoning. A nice accompaniment to the 'New Orleans Coleslaw' (p. 277).

What a great idea! Make and store the dry ingredients and when you want to make pancakes simply measure out 150g of the mixture and add the egg, milk and melted butter.

A standard coleslaw with store-bought dressing and additional pecans and maple syrup. A pleasant accompaniment to the 'Buttermilk Roast Chicken' (p. 274).

Quick Chilli : page 236
I tweak this recipe a little to improve the flavour by adding 1/2 a teaspoon each of allspice, smoked paprika, cocoa and sugar, as well as a can of diced tomatoes (drained).

Red Prawn and Mango Curry : page 15
Quick and easy to make. I followed Nigella's suggestion of substituting the mango with some pineapple and it worked well, albeit a little on the sour side.
