Quick Steamed Microwave Pudding Cake : page 333

Really quick, and reasonably delicious.

We already had Lyle's golden syrup, but I think Maple Syrup could fill in as an adequate substitute. You butter some ramekins, mix a simple cake batter, put a spoon of Lyle's in the ramekin, then cake batter. Cut circles of parchment, butter one side, and slap it on top of the filled ramekin. Microwave for 7 minutes. Its really that easy.

My ramekins were very slightly on the small size (~5.5 oz instead of 6 oz), and one overflowed in the microwave. But I was astonished to see how much they had risen. My ramekins have a little lip, too, and I was pretty ham-handed at prying them out. Nonetheless, they were beautiful!

I had mine with a dollop of greek yogurt, the kids ate their neat. Score was elevated ~ 1/2 a star for being such a simple dessert.
