These were good, but not amazing, especially given the amount of butter and chocolate that went into them!

This is a rich chocolate brownie batter, with a peanut butter-butter-sugar mix swirled in, and pretzels on the top. The concept, and the flavor combination, was a real winner. Unfortunately for me, these came out a bit dry. I don't think I over-cooked them, but maybe...

The crunchy pretzels might have been the best part - but if I were to make these again I'd break the pretzels into small pieces. The linear arrangement looked interesting, but cutting them was difficult.

I prepared these after touring MIT with my family. If you look, you might discern a subtle pattern that includes that 3 letter abbreviation.

Cranberry Orange & Pecan Coffee Cake

Update. A day later, still luscious. Both my husband and one of my students who bakes a lot have declared this to be the best coffee cake of their lives. And 14-daughter declared it Christmas-morning-worthy!

Delightful - its all that Southern Cooker said. Perfectly balanced citrus and cranberry flavor without being overly sweet. I should add that this is also not fat. for 2 loaves, 1/2 C butter, plus 1/4C butter for the crumble top.

Might be my favorite... these cookies had a good vanilla/caramel flavor, lots and lots of chocolate chips, and the smoked salt was subtle but added the perfect finishing touch
My son and I prepared a batch of these just before leaving on a trip. No pistachios, so substituted walnuts, which I chopped up finely.

There are 1.5C of chocolate chips - so none of the individual cookies were a disappointment.

We used hickory smoked salt. Baked as ~ 1 T drops (1/2 the size suggested) and baked them at the recommended 300˚F oven. Mine required about 16 minutes to bake.

I will certainly try making these again!

If you are looking for something cute for valentines, you could do a lot worse than making these. Its simple; goat cheese is mixed with shredded beets, flattened and cooled, then cut into hearts.

I made the mistake of leaving the goat cheese in the freezer, and it took more than an hour for it to become soft enough to cut into hearts.

The simple green salad was a nice backdrop to these hearts. We prepared these, of course, for valentine's day.

Persimmon Pudding

Easy, good flavor, and much less fat and sugar than other recipes I could find. The final product has a variable texture - soft pudding in the middle and firmer crust around the edge. It was really good with a small scoop of vanilla ice cream.

Note that this did not store well. After 2 days in the refrigerator, the parts exposed to the air had turned an alarming blue color. I suspect it is a pH effect with the pigments - it wasn't mold - but it was scary enough to turn it into chicken food.

Pumpkin Bread with Walnuts

Delicious! I didn't have pumpkin pie spice, but instead tried to wing it (I mean, really, cinnamon, cloves, nutmeg and ginger, right?). The walnuts are all on the top, it used one stick of butter (1/2C) and didn't have chocolate chips. The bread is moist, it tastes good, but I wish it had nuts throughout it.

I did cut down on the sugar (called for 1C lt brown sugar, I used 2/3C white and a dollop of dark molasses). Daughter was disappointed (maybe not sweet enough) but its perfect with a cup of coffee.

We have 15 blue austrailian pumpkins, courtesy of my husband's green thumb. Turns out they taste great!

Pumpkin Pie Bars

Joy the baker has given us two recipes for this (the one linked above, and the other one is here. I compared them, and followed the indicated one for its larger pan, but modified by adding salt. I did goof, though, by adding a 28 oz can of pumpkin instead of a 15 oz can. I had to bake the bars an additional 25 minutes for them to firm. They were less sweet, less spicy, then if I had not diluted the filling by adding so much pumpkin. But they were still delicious.

Salty Sesame and Dark Chocolate Chip Cookies

Winter 2013 update:
This is now our favorite chocolate chip cookie. I just have to accept that cookies have a lot of butter. the soy sauce gives these an amazing flavor, and the sesame flavor also delivers. Its like dessert with a hit of umami.

I am a fan of sesame seeds and salt. But when I saw that these cookies also contained soy sauce, I knew I had to make them.

The dough came together quickly, and I formed the cookies with my new oxo cookie scoop. The recipe says it only makes 20 - 24 cookies, but I probably got 40 or so out of this batch.

I loved the salty sesame flavor. But the cookies felt a bit greasy - most of them were very shrunken and oily (photo shows a few exceptional ones).

I'd make these again, but would have to figure out how to cut the fat.

This review is mostly to document my experience with chia seeds in a smoothie.

I'm fascinated by seeds with a lot of mucilage, such as chia and basil seeds. This recipe has you mix chia seeds with spinach and kiwi, and blend immediately. I like the way these mucilagenous seeds thicken things, so I did it a bit differently. I put 1T chia seeds in about 1C skim milk, and let it sit for about 30 minutes. By then, the seeds were each like a ball of cooked tapioca. I blended the milk-seed mixture with a frozen orange, some additional milk, vanilla, and about 2 tsp vanilla.

This was light yet filling. I'm sure it would be even better with spinach and kiwi!

Tomato Cobbler with Blue Cheese Biscuits

Delicious, and the blue cheese (from the biscuits) really works with the tomatoes!

I have a prolific cherry tomato plant - my favorite type - Mexican Midgets. We picked 2 1/2 lbs (from one plant!), and used just these to prepare this recipe. I also did a full onion caramelization rather than the 20-minute version specified in the recipe. I recommend cutting your onions into small-ish pieces so that they are more easily distributed among the tomatoes.

The biscuit dough was very wet, but as promised in the recipe it took on better form after kneading 10 times.

I prepared this in a larger pan - maybe 7 X 11? - and I cut the biscuits into squares and used all of them.

The one person who does not like blue cheese didn't care for these, but the rest of us enjoyed them.
