Steamed Brussels sprouts with a zing from a delicious vinaigrette.
I tried this recipe as a break from our usual roasted brussels sprouts. These steamed quickly, and then were doused with the vinaigrette. I decided then to cut them all in half - to give them more nooks and crannies to hold the dressing. It was a nice change of pace.

A quick meal with great flavor!

This is a simple recipe - ground lamb is seasoned with salt and pepper, and a patty is formed around a disc of goat cheese. You then broil (or grill) the burger. I broiled, as these are somewhat delicate, and it worked well.
The goat cheese helps the meat to remain moist, and adds a nice flavor. At the end you spoon a bit of mint/raspberry vinegar/wine vinegar mixture over the top.
I used the mint mixture to also baste the burgers while broiling. Watch out that yours don't open and lose the cheese, as happened to one of mine.
I was able to prepare 3 of these burgers with 13 oz lamb. I didn't eat one (calories!), but did have a small taste. That taste, and the silence in the room as it was being consumed, gave it the 4 star rating.

Coffee Blond Brownies : page 141
My copy of this book always opens to this page, and not only has its repeated opening compromised the binding, but the pages are well splattered, too.
This is a delicious and rich bar cookie. Blond brownies are sexed up with the addition of coffee, and chocoholics are not forgotten - chocolate chips are also included. And on top of this, these come together quickly.
When I was a graduate student, I made these often. They always satisfied that sweetness craving.

Stuffed peppers that are missing the rice (or other grain), and instead have veggies and goat cheese. These were tender and flavorful.
I cut my peppers in half, and stuffed half peppers. I found the filling only about 1/2 filled each half, but that was fine. Kid-friendly enough.
