Linguine with Lemon : page 158

A very simple recipe - lemon (zest, juice, and two sliced lemons), olive oil, butter, and salt, with a bit of Parmigiano-Reggiano - tossed over linguine. Not surprisingly, this is a very sour dish. We added more salt and more pepper, then more cheese, trying to balance the lemon.

I think if this were prepared with half the number/size of lemon, it would be much better. My 16 yr old son, who prepared this dish, loved it. But then he is the type to eat lemons straight. For the rest of us, it felt unbalanced. Our compromise rating was a 3.

Spaghetti alla Carbonara : page 144

Delicious! A well flavored pasta with pancetta (we substituted bacon), Parm, and Pecorino cheese. But in addition - it has eggs. Eggs are separated, the whites whipped in with the bacon/oil/pasta water (sauce), and then mixed with the pasta. While still hot, an egg yolk is added, and mixed in. The heat from the pasta cooks the yolk.

This dish was amazingly creamy, and had a great balance of salty peppery cheese flavors.

By the way - this was prepared by my 16 yr old son, and recipe selected because it seemed pretty fast. It only took about 30 minutes (but with assistance).
