Lovely roasted cauliflower, with a zing from balsamic and extra depth of flavor from Parmesan. So good that 13-daughter and I ate the entire six servings ourselves.

Orange & Avocado Salad

I used the linked recipe for its salad dressing - we prepared a simple orang and avocado salad (but missing the greens and red onion). The dressing was very simple- cilantro lime and orange juice, a bit of garlic, and salt and pepper. With no oil it was really light and allowed the flavor of the avocado to really shine.

Another recipe possible with no kitchen.

This dish was delicious, healthy, and well balanced. The one odd thing was that instead of boiling the gnocchi, it was pan fried. YUM! We substituted spinach for the chard. We also added a bit of thyme, because instead of diced tomatoes in italian seasonings, we used plain diced tomatoes. We will happily make this recipe again.

Smoky Maple-Mustard Salmon

What Kaye16 said....

Super easy, and the result was deliciously moist and flavorful. I think the final flavor profile depends a lot on the quality of your mustard. I must say I've not been very excited about Utah mustards, I like 'em real grainy. I finished the last of my grainy mustard, used a bit of honey mustard, and maple syrup and smoked paprika.

This is so simple, a perfect week night dinner.
