A light and delicious pasta dish! I borrowed this book from the library because it has a long list of zucchini recipes. Here, the zucchini is combined with mint and basil leaves, yellow onion, garlic, and mint and parsley. It tasted so nice, and was good served with a simple salad.

The initial impression when this bowl of pasta hit the table was a complaint -- "not nearly enough sauce". But the flavor is surprisingly well developed for something that cooked so quickly (hence the excellent rating). The leftovers lasted less than 12 hours in the refrigerator, and that is really saying something.
