Coriander Orange Scented Red Lentil Soup : page 74
This is my favorite lentil soup recipe now. The ginger, double dose of coriander and orange give it a surprising and fresh flavor without a lot of extra work.

I found this, like the cider chicken, to be too tart and lacking depth. Again maybe a better quality vinegar would have helped, but it came off as very one-note.

This was just ok. The cider never sweetened up as it reduced for me so the whole affair was rather tart and lacked a depth of flavor. Maybe a better quality vinegar would help.

Another fast and flavorful meal that has the veg built right in. I like to add a bit of vermouth to the broth to give it an extra kick of flavor.

I love this recipe. So good, so easy. I often make it as a main course with brown rice, some fresh avocado sliced over the top and sour cream and or grated cheese. Also good with chipotle peppers in adobe sauce instead of jalapenos. Don't skip the butter!

These are pretty good, but it is hard to find ground dark chicken meat. I also prefer to add 3 tbs of brown sugar to the apples and onions when they are browning and leave out the caraway seeds. A teaspoon of cornstarch at the end can help bring the sauce together if the apple pectin isn't doing it.

I love this dish for quick and easy light lunch. I ate this almost every day for weeks. I often skip the greens and the bread crumbs, but not the cheese.
