This is an excellent 30 minute meal -- some chopped pancetta and a sliced red onion sauteed together in a bit of EVOO for less than 10 minutes. Add a hefty amount of freshly ground black pepper and turn off the heat. Cook your spaghetti, reserve some of the water, and then add both to the pancetta and onion. Mix it up then add equal amounts of parmesan and romano cheeses and some parsley.

For me the amount of pepper (a tablespoon for a pound of pasta) was a little intense -- next time I might cut that amount almost in half. Still a really terrific pasta dish and great if you need to pull something together last minute.
