My husband and I really enjoyed this side dish -- the combo of beans, shallots, toasted walnuts, chevre, and a bit of walnut oil really worked for us.

Although I am sure this would have been superb with fresh green beans, I used frozen haricots verts from Costco ... and it worked beautifully. I think this is one of those delicious all-year-round recipes.

Also nice for entertaining as the beans can be steamed , the walnuts toasted, the shallot chopped all in advance, and they can be sauteed in 2-3 minutes just before serving.

Would make a nice side for a tarragon chicken.
