A nice summer meal -- needs about a 90 minute lead time to make the onion marmalade (recipe on the same page), and then it's a snap to make the spice rub and grill the bread and chicken. I used baby spinach rather than arugula since that's what I had on hand but otherwise followed the recipe. The individual ciabattas sold in packs of 12 by Costco are perfect for this.
