I made this last night after being reminded of my book by your recent reviews portugo. I used three nice breast pcs and did this in the oven -- I steamed the onion and garlic in the butter and oil in a sauce-[an and then added it to the chicken which had been baking in a little broth (I had the dish covered with foil during this time as I started with frozen chicken)for some time. I baked it till the chicken began to lightly color and then added the crushed juniper berries and then later added the genever and covered it again to finish for the last few minutes. I served parsleyed potatoes with it. I love juniper flavor in lots of things due to my years in Belgie and encounters with the berries in many sauerkraut dishes in Germany as well -- and genever, well, genever is just a special thing -- after all Hasselt is home to the Genever Museum after all! Delicious dish and easy, easy.

The juniper flavor is really delicious with the chicken. I'd just spoon some of the fat off before serving and remove the larger berry pieces.
