It’s not a Bolognese a la Marcella Hazan, but it’s very good for what it is – a one-hour meat sauce that’s rich in flavour.

The technique of sautéeing the aromatics and vegetables in a fair amount of oil not just until they’re soft, but until they’re golden and almost caramelized adds depth of flavour. After browning the ground meat, canned tomatoes, herbs etc are added. Active chopping and cooking time is about 30 min; while the sauce simmers for the remaining 30 min, pasta can be cooked, salad can be made etc…

The sauce doesn’t include milk or wine, though I’m sure the latter can be added to the simmering pot, and it’s a little more tomato-y than Marcella’s, but it’s delicious nonetheless.

Very tasty for not much effort and a great alternative when you don’t want to have your stove on for 6 hours!

Very nice sauce. I used ground sirloin but it calls for ground beef chuck. Query means to grind your own or get it from a butcher? Yummy.
