A humble and hearty meal for a cold winter’s day and a great way to use up left over baked ham.

Cabbage, onions and apples spiced with cloves and juniper – I love having another recipe that calls for this under-used spice - are cooked slowly with vinegar and some demerara sugar for a great sweet-sour flavour. This mixture alone would make a great side dish though next time I would add the apple slices much later so they retain more of their shape and texture. The ham is added at the end to heat through along with an additional splash of balsamic vinegar.

Mr Slater writes that serving this with a cold beer is almost compulsory…..I would add that a slice of good pumpernickel is a requirement as well!
