According to my family, bacon makes everything better, including salmon. This is a tasty and super simple preparation that involves a piece of salmon, a strip of bacon and a sprig of thyme.

If I’d thought about it at all, it would have occurred to me that the bacon wouldn’t be cooked thoroughly in the 15 minutes it takes the salmon to bake and I would have partially cooked the bacon strips while the oven pre-heated. As it was, I didn’t think of this, nor did Mr. Slater mention it, so the bacon wasn’t quite crisp enough for my liking.

Side note: I used the same preparation for boneless, skinless chicken thighs which were also delicious – the bacon was properly cooked in the 35 minutes it took the chicken to roast.
