More of a side than a salad, this easy recipe is sure to please. I used regular old carrots, but it would be more beautiful with multi-colored ones. But mid winter, with normal carrots, this made a beautiful and delicious addition to our dinner. The miso sauce came together very quickly, and the sweetness of the carrots was perfect with the salty umami flavor of the miso. Served as a smear of miso with carrots, and a sprinkling of scallions, this dish is good enough for guests.

Note that I used 12 large carrots and halved the miso sauce. We did OK, but could have used about 10% more. Of course, YMMV.
