The result of the recipe is better than 3, but the instructions and proportions are wrong, so I've down-graded based on that. Too bad.

I made the mango ice cream with only 1/3cup sugar (instead of 1/2cup). It was fine, very good even.

The macadamia nut cookies were good enough to make on their own. Dropping "large spoonfuls" of dough as instructed, I had 9 cookies. I used six to make three ice cream sandwiches (one spare in case something didn't work right) and we enjoyed munching the other three cookies.

For the fruit, I used some mango chunks, kiwi chunks, and a handful of (frozen, thawed) mixed berries for color. I actually bought a pineapple but overlooked it even though it was there on the counter. Actually this didn't matter because there was more than enough fruit. No extra sugar, although I did think about a squirt of lime juice and maybe a bit of ginger to make it a bit more tropical.

I made up three ice cream sandwiches and served one each as instructed, with a scoop of fruit. (One still is in the freezer for another night.) We found this too much. At the size of my "large spoonful" cookies, a half sandwich each with fruit would have been fine.

This would a nice recipe for a party because 1) it's easy and 2) it can be made ahead. You probably want to have the sandwiches in the freezer the day before. The fruit is easy to prepare, earlier in the day, and the dish can be quickly assembled.
