What in the world possessed me to make something as unhealthy as doughnuts on new years day? I guess I know - I had been promising my daughter for a year that we would make doughnuts, and it seemed like a good test of my induction cooktop.
This recipe made a sticky dough, and my 2 1/2 inch round cutter resulted in only led to 9 doughnuts. But my biggest problem was getting the center cooked. These puffed up so round but the centers were goopy. If I cooked them much longer - so the outsides were nearly burned - then the inside was nearly done. I did have a thermometer in the oil - and kept it above 350˚F.
I wonder if my altitude worked against me. Perhaps the high altitude caused the doughnuts to puff out extra, and so the heat failed to penetrate to the center? Any thoughts out there?
I will say the little scraps I cooked up were delicious, and the induction did a nice job of heating up the oil
