My favorite way to cook summer corn is to grill it and eat it plain without seasoning, maybe a little salt. Good summer corn doesn’t need it. I was intrigued to see if
Chef Keller’s corn on the cob recipe could change my mind, like many of his others. This corn was very very good, but I think some of the other ingredients overpower the corn. This could be because I didn’t season properly or because my summer corn was not at peak sweetness. Next time I will make sure to use the other ingredients a little less, so the corn can be the star. I did love the addition of lime zest. It was a nice balance between the sweet corn and sour lime.

Very good recipe. I will go back to many times, especially when grilling is not an option.
