Excellent peach flavor, and I loved the cornmeal grit in the biscuits on the top.

I followed southerncooker's advice, and blanched and peeled my peaches. I also did not add the suggested water (my peaches were hovering on the ripe/over-ripe line).

The recipe suggests eating this dish within 20 minutes of taking it out of the oven. That didn't fit our dinner time line, and it was probably just over an hour before we dug in. The bottom of the biscuits were very soggy (from the peach juice), and not in a good way. I think this sogginess is why they suggest eating it very soon after preparation.

Note that the biscuit mixture is very soft, but it was easy to gently place spoons full on top of the peaches.

My tasters and I enjoyed this one except for one thing, none of us cared for the peel on the peach. I will be making this one again, without the peel, as we all enjoyed the taste and texture of the biscuit topping with that bit of stone ground cornmeal.

This one is also good at room temp. and cold from the fridge.
