Tasty and light. Enjoyed this version of buckwheat granola with minimal sweetener - banana and 2 T. maple syrup- and a good dose of nuts.. I used pecans, hazelnuts and cashews and doubled the cinnamon. I soaked my groats overnight, dried them on paper towels and it was still good and crunchy. Also added an egg white to get a "clumpier" granola.
