I found this recipe for onion soup to be too sweet. The recipe calls for a quarter cup of sugar to be added to the carmelizing onions and this was way too much for me. The recipe then calls for ruby port as well, adding more sweetness. My favorite recipe for onion soup remains Julia's in Mastering I.
