Even though this salad appears in a winter issue, this is a salad I love for summer entertaining. It pairs really well with grilled meat or fish; I also serve this when I am looking for a salad to pair with a Mexican main dish. Marinating the onions...

Issue is actually Dec. 05/Jan. 06. Simple, tasty way to add a healthy green veggie to an Italian meal. I prefer this with parmesan rather than pecorino but both are mighty good. Barely a recipe it is so simple. I do keep an eye on it while roasting...
