The 1997 Joy of Cooking

Surprisingly tasty! I used reduced fat cream of chicken soup and cream of mushroom soup and low sodium chicken broth, and it was still really good!

Overall, this recipe turned out great. I added in some portobello mushrooms and used only 1/2 the beef stock it required (and replaced the other 1/2 with water) - the soup was still really rich, and I think it may have been too rich if I had used the recommended amount of beef stock. Delicious!

This is the first German potato salad I have made, but I thought it was good. I felt it had too much vinegar and ended up draining some of it before serving. I also didn't have dill pickles on hand, but the dish was still good without them.

The Bon Appetit Cookbook: Fast Easy Fresh
By Barbara Fairchild

One of my favorite soup recipes - the diced ham adds a lot of flavor. I add a good amount of freshly ground black pepper. Canned diced tomatoes work fine if good, ripe tomatoes are not available.

I felt that I needed to add more olive oil to make the dip creamier. Otherwise, it was very pasty. Good flavor, however.

The dried porcini mushrooms overpowered all the other flavors in this recipe, and I usually adore dried porcini mushrooms. The flavor may be less overpowering if they are reconstituted first, then added in with all the other ingredients.

Delicious! I was suprised by how moist this was!

Very good for a low-fat, low-calorie meal. I doubled the amount of garlic. I would definitely recommend serving this over pasta and NOT rice (the instructions say to serve with either).

A great soup, and even better if you add bacon or diced ham.
