Chicken Pot Pie (from Dahlia Lounge)

A good recipe for a large group (or a week of lunches). I used frozen puff pastry instead of the crust recipe.

If you love Ben & Jerry's Half-Baked ice cream, you'll love these! If you want a simpler recipe, use a brownie mix to make the brownie chunks. My co-workers devoured these when I brought them into the office.

It's pretty amazing that you don't need an ice cream maker for this recipe. The iced maple cream is light and fluffy (almost mousse-like?) with just the right amount of maple flavor.

Pear and Almond Tart

Even though I had to make the crust without a food processor, this tart turned out beautifully! I used canned pears (this is "trés French" according to Deb) since I have a limited produce selection here in Taipei. I made this for a Thanksgiving potluck, and people were impressed with how professional the pear "design" looked.

Peanut Butter Cookies

Best peanut butter cookies ever!! Perfectly chewy and very peanut-y. The sugar "crust" gives an extra crunch and makes these cookies look extra special.

This was a little plain the first day, but it was absolutely perfect the second day! I guess it just needed some time to reach its full flavor. Deb's suggestions for doing this salad with Thanksgiving leftovers sounds intriguing...

Broccoli Slaw

I wanted to bring something a little lighter to a potluck barbecue this past summer. Broccoli is one of my favorite vegetables, so I loved the idea of a broccoli slaw. This one was okay...it was missing any kind of real punch in the flavor. I'm thinking I should have made it the day before and let the flavors develop more overnight? Kids at the party liked it (that surprised me)!

My meringues started out big and fluffy right out of the oven, but they very quickly started to collapse. I've read that humidity can do that...and yes, it's pretty humid here. These still taste wonderful though! They just don't look as nice they could. These cookies were also super easy!

These were very easy cookies to make, and they stay thick and chewy as promised! I think chilling the dough before baking really helps them stay thick. I added chocolate chips and substituted dried cranberries for raisins and pecans for walnuts.
