Chicken and White Bean Soup : page 69
A great soup. I add more liquid as it gets very thick when made to recipe.

We think that this is a slightly unusual soup and a great change of pace. We love it with the lima beans and basil!

Garlicky White Bean and Spinach Soup : page 34
Lots of garlic and creamy texture with running the beans through an immersion blender. Very good flavor. One of constant repeats.

Homestyle Chicken and Vegetable Soup : page 63
Great hearty soup. We love all of the vegetables in this and with the chicken it is a complete meal (although we usually have bread and cheese too). I sometimes add 1/4 - 1/2 cup each of corn, green beans, and peas (thanks to my Aunt Bonnie).

Pasta e Fagioli : page 38
Wonderful recipe. We have made this many times throughout the winter. We usually add a little more liquid as it is SO packed with goodies that there is not enough broth.

Racy Red Lentil Soup : page 138
This is an unusual soup. I have not cooked red lentils before but they were easily found at Whole Foods. They were more pink than red. However after I had simmered the soup for 45 mins covered - the soup was golden colored. It looked like corn soup! I could taste the ginger, which I liked - but couldn't get over the color. Soup was ok - there are a lot of better ones in this book.
I have since learned that I don't know my ingredients very well - apparently red lentils lose their color when cooked. Go figure.

Tuscan White Bean Soup : page 32
This soup is very good. Wonderful flavor. I usually have to add more liquid to the soups made from this book but not this one. I make this to recipe.
